Sorry if the title was too… cheesy. *dies laughing at own joke*

You’re probably wondering why I’m bothering with such a basic recipe. Honestly, I don’t even know, I just thought it looked pretty with all the green and brown, and it’s also super easy and quick to make. So I’m hoping it might be useful to at least one person out there.

This tastes best with tiger bread or even a baguette, but if you only eat healthy wholegrain stuff then you’re welcome to use that too.

Ingredients:

1 or 2 eggs

handful of spinach

olive oil

cheese (whatever type, I used cheddar for this one)

bread

It was difficult to break down the cost of each ingredient as there was a lot in each packet, but more or less it would’ve cost me £4 to buy everything above. How do I guess how many portions a loaf of bread, bag of cheese, bag of spinach and a carton of 12 eggs would make? I’m so confused right now and to say my maths skills aren’t great would be an understatement. Let’s just divide it by 10 (because it a nice round number) which makes one portion come down to 40p.

40 freaking peeeee. My recipes are getting cheaper.

You can scramble your eggs whichever way you like, but for the sake of this blog post let’s do it the Indonesian way (the oily way).

  1. Heat a little olive oil in a pan

  2. Crack open an egg (or two, depending how greedy you are) and add it to the pan, mix it around with a spatula until it’s all broken down

  3. Keep stirring it, otherwise it’ll stick to the pan (unless you have a non-stick pan)

  4. When it starts to become solid, add however much cheese you like (I tend to get excited and add way too much, but then I remember these wise words “you can never have too much cheese”).

  5. Add a handful of spinach

  6. Stir together until the spinach softens, all done!

Anyway, all this eating is making me pretty egg-xausted (sorry, I had to).
