Veggie Madras

Veggie Madras

I think I’ve been doing too much work on headlines because I had to refrain myself from calling this post ‘MADRAS MADNESS!’ in a sensational tabloid style (see mum, I do learn things at uni).

I had a sudden brainwave today. Why don’t I start a new section of my blog completely dedicated to the most important thing in my life: food. Since I’m a student who can’t afford to eat out all the time or buy fancy food, why don’t I share cheap recipe ideas that I usually cook? Also, I’m not sure if this is just me procrastinating when I should be writing a dissertation, or if I’m just looking for excuses to cook (re: eat).

This recipe is so simple, it’s impossible to mess up. If you do, then maybe don’t bother reading this.

  1. Dice up your onions, stir-fry them in a little oil until golden brown.

  2. Chop up your carrots, add to the pan.

  3. Once the carrots have become softer, add the beans to the pan.

  4. Give them 5 minutes or so (if it becomes too dry, you can add a little water to your pan).

  5. Add the madras sauce.

  6. Mix well, then leave to simmer. Done.

Serve with rice/naan/pita bread. (But rice FTW).

If you’re looking for a protein fix then you can add chicken, meat or fish as well. Just stir-fry them with your onions.

I had to dig through the bin to find my soggy receipts, but here is what I bought:

Ingredients:

Madras sauce: 79p

1 onion: 10p

2 carrots: 23p

Trimmed beans: £1

Total spent: £2.12

This recipe makes 4 servings.

One serving: 53p.

I don’t know about you, but I think 53p for a meal is pretty damn good. Almost as good as it tastes.

Thank me later x
